What my super picky eater will actually eat

If you have never raised a picky eater, consider yourself blessed.   Throw in the strong will and it’s a messy combo.  I try to remind myself that my child weighed 3lbs at birth so it shouldn’t be a surprise to anyone that he has always been on the lower end of the growth chart if he’s even on growth chart (it has varied over the years), but doctors have a hard time accepting that he is “just small.”

There have been tests, and bone density scans, and blood work, and nutrition consultations which resulted in the fact that there is nothing medically wrong with him.  It’s a blessing and a curse because when something is wrong with your child you want to fix it. His pickiness is something that I want to fix quickly, and I just can’t right now. BUT what I can do is I can stop beating myself up over it and learn to adjust to what he needs right now.

As moms we try so hard not to play the comparison game but it’s so hard. We have jumped through hoops to accommodate a child under the promise from pediatricians that he will outgrow this, and I can almost see the light at the end of the tunnel.  Almost…

Fun Story: in April of 2021 we were going a bit crazy, we had tried all the things to get Colton to eat anything other than strawberries, pasta, broccoli, and pizza and when that didn’t work, we just started adding extra fats to the few foods he liked and eventually he started to want to try new things like a hamburger and mashed potatoes and avocados.  Yay Colton!  We were literally jumping through all the hoops!  One night in particular that sticks with me is when he requested an Alphabet themed letter “B” meal.  At the time he was obsessed with the ABC’s, so it made sense. I came up with broccoli, bacon and bread. The pediatrician said just do whatever it takes… he will grow out of this… but I had to wonder if he was playing me. I mean come on-who doesn’t like bacon and bread.

So, you have a picky eater too? Here is a recipe that my guy will eat. 

Crockpot Honey Chicken

  • 6 boneless, skinless, boneless chicken thighs (Thighs generally have more fat so it’s an extra way to sneak in those healthy fats)
  • 4 garlic cloves, mince.
  • 1/3 cup honey
  • 1/2 cup low sodium ketchup
  • 1/2 cup low sodium soy sauce
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh parsley

Spray the crock pot with a nonstick spray. Place the thighs on the bottom of the crock pot.  Mix the rest of the ingredients together in a bowl and pour on top of the chicken. Cook on low for 5-ish hours depending on your crock pot! That’s it, easy peasy! Steam some broccoli in the microwave and a package of 90 second uncle ben’s rice and you have a super quick, well-balanced meal!!  My meal picky eater and husband love it and I’ll admit the chicken is delicious!
